Fried Fish with Curry SauceServes 2
· 4 to 6 cups extra-virgin olive oil, for deep-frying
· Four 3-ounce white fish fillets, such as perch or cod, skin on
· Kosher salt and freshly ground black pepper
· Flour for dredging
· 6 spinach leaves
· Curry Sauce (recipe follows)
· 1 tablespoon toasted pine nuts
· 1 tablespoon toasted pistachios
· I tablespoon dried currants
Heat 3 inches of olive oil in a medium heavy pot until it reaches 380ºF. Sprinkle the fish with salt and pepper, dredge in the flour, shaking off the excess, and add to the hot oil. Fry for about 3 minutes, or until browned and crisp. Transfer to a plate. Add the spinach to the hot oil and fry for about 30 seconds, until bright green and crispy. Spoon the sauce over the fish and garnish with the spinach leaves, pine nuts, pistachios, and currants
